Air Fryer Mixture Recipe | No-Oil Mixture Recipe | Vegan and Gluten-Free Mixture Recipe
Mixture is one of the most popular snacks in India, with each state having its own variation. It’s a crunchy and addictive treat! Instead of traditional deep-fried mixture recipe this version is made using an air fryer. Instead of the usual besan flour, we’ve opted for rice flour to create the sev for this recipe.
Crispy snacks like khara sev, chakli, and mixtures are universally loved for their addictive crunch. Traditionally, these snacks are deep-fried, but I’ve been experimenting with air-fried versions of our favorite treats, and I’m really enjoying the results.
To give an honest review: yes, deep-fried snacks tend to taste richer, but air-fried versions are guilt-free, tasty, and use little to no oil!
Ingredients
- 1 cup rice flour
- 1 tsp rock salt or salt to taste
- 1/2 tsp jeera or cumin seeds
- 1/2 tsp ajwain / omam
- 1/4 tsp jeerige menasina pudi optional
- 1 tsp or more red chili powder
- 1/4 tsp turmeric powder
- 1 tsp sesame
- 2 tbsp groundnut/peanuts
- 2 tbsp Fried gram
- 2 tbsp sliced dried coconut
- above ingredients - You can add more or less
- Few curry leaves
- 1 cup water
- Chakli press with sev disc
Instructions
- Boil water in a pan on medium heat.
- Once the water is boiling, add salt, ajwain (omam), jeera, sesame seeds, turmeric powder, rice flour, and red chili powder. Mix well and add a pinch of hing (asafoetida).
- Stir the mixture, turn off the heat, cover it, and set aside for a few minutes.
- Dry roast the peanuts in a pan on medium heat, then transfer them to a plate.
- Dry roast the coconut slices until golden yellow, and transfer them to a plate.
- Dry the curry leaves on low-medium heat.
- Grease the chakli press and the sev disc.
- Once the rice mixture is warm, knead it well until it forms a soft dough. Kneading is important for texture.
- Place the dough in the chakli press as shown.
- Press the dough in a circular motion directly into the air fryer pan. Ensure the sev does not overlap.
- Set the air fryer to 180ºC and the timer to 20 minutes.
- Check after 10 minutes. The bottom part will be cooked—flip the sev to fry the other side.
- After another 8 minutes, check again. Break a piece to see if it’s crisp. If not, fry for a few more minutes.
- Break the sev into pieces, then add roasted peanuts, hurigadale (roasted chana dal), coconut slices, and curry leaves. Mix well.
- The sev should take around 18 minutes to cook. Allow an extra 2 minutes if needed, and then the mixture is ready to serve.
Notes
You can add a little oil, chili powder, and salt to enhance the flavor before serving.
